Assemble the ingredients for the rub and mix thoroughly in a food processor for at least 3 minutes. The recipe will make enough for 6 racks of ribs. Next preheat your smoker to 275° F. Place a pan of apple juice under the grates to allow it to wet smoke. Now prep and coat your ribs and place them onto the smoker with the smallest rack in the center and the thick end towards your fire box.
Smoke using apple wood for 3 hours misting them with apple juice every hour to keep the rub moist. At the end of three hours wrap the ribs in aluminum foil on a bed of brown sugar, squeeze butter, and honey. Wrap tightly making sure not to puncture the foil.
Place your ribs back onto the smoker for 1 hour at 275° F. Before opening be sure to open on end of the foil and drain the liquid from the foil.
Your Ribs are now ready to cut and serve. Enjoy!
