Spiced Apple Rum Cake
4 Granny Smith apples
4 whole eggs
1 1/2 cups granulated sugar
3 ounces Meyers Spiced Rum + some to soak the bottom
1 1/2 cups flour
1/4 pound butter
2 tablespoons baking powder
1/2 cup milk
1 teaspoon vanilla
1 1/2 cups brown sugar
1/2 teaspoon cinnamon
pinch nutmeg
Preheat the oven to 375 degrees. Melt the butter in a deep sauté pan and mix in the brown sugar. Place the peeled and sliced apples into the sauté pan along with the cinnamon and nutmeg and cover allowing to simmer for about five minutes stirring occasionally to coat the apples. Then remove the lid and add in the rum and simmer, uncovered, to reduce the juices by 1/4. Allow this mixture to cool about 5 minutes.
Place eggs and granulated sugar in mixer and mix into a ribbon. Add the flour, vanilla, milk, and baking powder into the mixing bowl with the egg and sugar ribbon and mix well. Pour the batter over it covering the apples completely with the batter.
Place the pan (uncovered) in the oven and bake at 350 degrees for 40-50 minutes. Remove from the oven soak the cake with more Meyers Spiced Rum. Turn over onto a serving platter while still warm being careful not to let the hot juices spill onto your forearm.
This recipe will also work well with peaches. Don't like rum? Substitute brandy! It tastes great!!! To serve, dust with confectioners sugar or serve hot with a scoop of vanilla ice cream. Enjoy!!
