Habanero Pepper Jelly

4 orange bell peppers
4 habanero peppers
3 tblspns pectin
1/3 cup apple cider vinegar
1/2 tspn butter
2 cups granulated sugar.

Seed and mince all of the peppers as small as you possibly can.  Use gloves when working with the habaneros.  I cheat and use a automatic jelly maker but this can easily be made in a pot.  You'll just have to stir it yourself.  Put the pectin in your pot covered by the chopped peppers over medium heat.  Add the vinegar and butter and stir for four minutes.  Turn the heat up and add in the sugar.  Continue stirring as the mixture comes to a boil cooking for 17 minutes.  Immediately pour into waiting jars and preserve.  This should make 4, 8 ounce jars of jelly.

This thing is great if you like making jelly and jam but hate stirring like I do.  It's the Freshtech automatic jam & jelly maker by Ball.  Well worth the money.  If you order on line and have it delivered to your local Walmart you can get it for $75.00.  In the store it's $95.00.
