Lamb Burgers with Tzatziki Sauce

Ingredients for the burgers:
4 lbs ground lamb (80-85% lean)
1 large
onion, finely chopped
4 tbspn
fresh mint, finely chopped
4 tbspn
fresh dill, finely chopped
5
cloves garlic, minced
2 tspn
cumin
2 tspn
sea salt
1 tspn
ground cloves
1 tspn
black pepper
1 tspn
red pepper flakes
Mix all ingredients in a large bowl. Divide into 12 equal portions and form into burgers. Make a depression in one side to keep the burgers from turning into a ball when cooking them. Place a small dab of softened butter into each depression to melt into the burgers while cooking and keeping it from drying out.
Grill the burgers on a hot grill for 4 minutes each side. Safe temperature for lamb is 165° F.
Ingredients for the Tzatziki Sauce are:
1 cup
strained greek yogurt
1 cup
sour cream

cucumbers, peeled, seeded and diced
1 1/2
tsp chopped fresh dill
3
tbsp olive oil
1 tbsp
vinegar
2
cloves garlic, minced finely
1/2 tsp
salt
1/4 tsp
white pepper
This should be prepared one day prior to give the flavors a chance to meld. Serve with Pita bread, thin sliced tomato, feta, and red onion. Enjoy!
