Roast Pork with Cracklin'

1 7-10 lb bone in Pork Butt skin on
4 tblspns olive oil
Coarse Kosher Salt

Start by scoring the skin of the pork butt in both directions with a sharp knife.  Cut through the skin but not into the meat itself.



Now rub the skin with the olive oil and sprinkle generously with the Kosher Salt.


Place the pork on a roasting rack in a pan and cook at 375°F until it reaches an internal temperature of 155°F.  


Then raise the temperature to 450°F and cook to an internal temperature of 165°F.


Allow to rest for 30 minutes.  Then carve and serve.  You can easily remove the squares of cracklin' from the roast to serve with the meat.  Enjoy!
