Salt Crust Turkey Breast

1 3-5 pound Turkey Breast (skin on)3 lbs Coarse Kosher Salt
2 cups Flour
2 cups water
3 egg whites
1 tblspn dried sage
1 tblspn dried sage
1 tblspn ground pepper
Place all ingredients, except turkey, into a mixing bowl and mix well scraping down the sides of the bowl with a spatula. Final mixture should be the consistency of wet sand, not too wet.
Now spread a 1/4" layer out on an aluminum foil half sheet large enough to fit the breast onto.
Place the breast on this layer, skin side up, and cover it with the remaining mixture being sure to seall it completely to the bottom layer.
Place in your grill, or oven, at 350° F and cook until it reaches an internal temperature of 165-170° F. This takes a little over an hour.
You can easily pierce the salt shell in one spot to check the temperature.
Now remove the salt crust and the skin from the turkey breast and discard. You can easily pierce the salt shell in one spot to check the temperature.
Carve and serve with all of the usual trimmings for a great turkey dinner! Enjoy!
