Meatloaf Burgers

3 pounds ground chuck (80 percent lean)
2 pounds ground pork (pork tenderloin)
½ cup plain bread crumbs
1 tblspn olive oil
1 yellow onion
1 tblspn fresh thyme
1 tblspn kosher salt
1 tblspn black pepper
3 tblspn Worcestershire sauce
½ cup chicken stock
¼ cup tomato powder
1 tblspn garlic powder
3 eggs
12 Kaiser Rolls
1 bunch curly lettuce (loose leaf)
4 beefsteak tomatoes
Heat the olive oil in a medium sauté pan. Add the onions, thyme, salt, and pepper and cook over medium heat until the onions are translucent. Remove from heat and add Worcestershire sauce and chicken stock.
In a large bowl, combine the ground meat, onion mixture, bread crumbs, and eggs, and mix well.  Place in a cold fridge for one hour.
Shape the mixture into a round loaf on a meat rack in a pan containing 2 cups of water. 
Smoke for one hour with oak or fruitwood. 
Now raise the temperature to 350°F and cook for 2 hours to an internal temperature is 160° F.

Remove from heat and allow to cool. Slice your meatloaf into 1 ½” thick slices. Only cut off enough for your servings so the remainder doesn't dry out. Now place some lettuce and a slice of tomato onto a roll. Place your juicy slice of meatloaf on the roll with the lettuce and tomato and your are ready for a total taste treat. Enjoy!
