Pork Souvlaki

These date back to before 1700 BC and are an amazing rendition of the kebab family.  I served mine with a Greek salad and Greek crispy potatoes.  You'll need some Pita, chopped tomato and Tzatziki.  Be sure and make the Tzatziki the day before and let the flavors come together overnight in your fridge.  The full recipe makes 8 however I halved it.

Ingredients for marinade
4 pounds pork tenderloin  (trimmed of all fat)
3 lemons
½ cup olive oil
½ cup red wine  (a Merlot or Chianti will work fine)
1 tblspn dried oregano
1 tblspn chopped mint
6 cloves garlic

Ingredients for skewers
16 sweet tiny bell peppers or 8 regular
16 sweet boiling onions  (cut in half and soak in saltwater for 1 hour)

Cut your pork up into 1 ½" cubes.

Place all of your marinade ingredients and your pork into a large ziploc bag.  Marinade in your fridge for 3 hours.
Place ingredients on skewers alternating.  Do not rinse the marinade off to the pork. Once together brush with remaining marinade prior to grilling. If using wooden skewers be sure to soak them in water for at least one hour prior to use.
Now place on your pre-heated grill at 400° F.  Cook for ten minutes and then turn over and cook for a further ten minutes. Slice the remaining lemons in half and grill them. Serve with Pita, some chopped tomato, and Tzatziki.  Enjoy!

Just in case you don't have them here are the ingredients for Tzatziki.  Just mix well and refrigerate overnight.


Tzatziki
1 cup strained greek yogurt
1 cup sour cream
2 cucumbers, peeled, seeded and diced
1 ½ tspn chopped fresh dill
3 tbspn olive oil
1 tbspn vinegar
2 cloves garlic, minced finely
½ tspn salt
¼ tspn white pepper
