Barbecued Chipotle & Garlic Oysters
Chipotle Oyster Sauce
3 chipotle peppers in adobo sauce
1 tblspn adobo sauce
3 garlic cloves minced
3 tblspn molasses
3 tblspn soy sauce
1/3 cup of brown sugar
1/2 cup of ketchup
2 tblspns olive oil
Garlic Oyster Sauce
1/2 cup Romano or Parmesan Cheese
2 tblspn minced garlic
2 tblspn Olive Oil
1 tspn Coarse Kosher salt
Make the two sauces and spoon liberally onto washed, shucked oysters on the half shells. Place onto a baking tray and place under the broiler for 15 minutes or you can simply place them onto your grill and grill until the topping bubbles and the juices reduce. Sprinkle some freshly grated Parmesan, or Romano, cheese on top of the garlic butter ones. Serve with a toasted baguette. Cool before serving as the shells get very hot. Tip: Save the half shells and wash for latter use. You can buy good oysters in the jar for a lot less and "refill" your shells. Enjoy!
