Italian Meatball Soup with Tortellini

medium onion, chopped

baby carrots sliced thin

oz beef broth

oz diced Roma tomatoes

oz tomato sauce

tspn sea salt

oz Three Cheese Tortellini

bunch baby spinach washed, cleaned and chopped
Saute'
onions and carrots in the olive oil until translucent. Add in the
garlic and stir. Brown the meatballs in some olive oil in a separate
pan.
Now add in the remaining ingredients except for the tortellini and spinach. Bring to a boil and then reduce the heat and allow to simmer for 30 minutes.
Add in the tortellini and spinach and cook until the tortellini is al dente'.

Serve with freshly grated
Parmigiano Reggiano grated
over the top. Enjoy!
