Italian Meatball Soup with Tortellini

4 tblspns olive oil
1 medium onion, chopped
12 baby carrots sliced thin
4 garlic cloves minced
32 oz beef broth
15 oz diced Roma tomatoes
15 oz tomato sauce
1 tblspn oregano
½ tspn sea salt
¼ tspn red pepper flakes
16 meatballs
10 oz Three Cheese Tortellini
1 bunch baby spinach washed, cleaned and chopped

Saute' onions and carrots in the olive oil until translucent. Add in the garlic and stir. Brown the meatballs in some olive oil in a separate pan. 


Now add in the remaining ingredients except for the tortellini and spinach. Bring to a boil and then reduce the heat and allow to simmer for 30 minutes. 



Add in the tortellini and spinach and cook until the tortellini is al dente'. 


 Serve with freshly grated Parmigiano Reggiano grated over the top. Enjoy!
