Barbecued Pork Belly

Ingredients:

4 pounds pork belly
8 ounces pork rub
12 ounces BBQ Sauce

Start by slicing your pork belly into 1" thick strips.



Now cover all sides with your rub.  If you don't have one here are the ingredients for my rib rub which I used in this recipe.

1 cup Brown Sugar
½ cup Tomato Powder
½ cup smoked paprika
½ cup Butter Powder
½ cup Kosher Salt
¼ cup Molasses Powder
¼ cup Chili Powder
2 Tblspn Old Bay Seasoning
2 Tblspn Black Pepper
2 Tblspn Garlic Powder
2 Tblspn Onion Powder
1 Tblspn Dry Mustard
1 Tblspn Cayenne Pepper

Preheat your grill/smoker to 275°F.  I used the CharGriller Wood Pro pellet smoker for this. Place the ribs on the grill and cook for 1 hour.  Then turn and cook for a further hour.


After the second hour brush both sides with your favorite BBQ sauce and cook for a third hour allowing the sauce to set.


Remove from the grill and serve.  Enjoy!
