Peach & Cookie Dough Cobbler

Ingredients:
5 peaches peeled and sliced
¼
cup packed brown sugar
3
tablespoons all-purpose flour
1
teaspoon lemon juice
½
teaspoon grated lemon peel
½
teaspoon ground cinnamon
Cookie Dough Topping:
1
cup all-purpose flour
1
cup sugar
1
teaspoon baking powder
¼
teaspoon
salt
¼
teaspoon
ground nutmeg
1
large egg, lightly beaten
½
cup
butter, melted
Peel and slice the peaches into wedges.
Preheat
oven to 375°. Place peaches in a greased, pre-heated, 10 ounce dutch
oven. Mix the brown sugar, flour, lemon juice, peel and cinnamon and
sprinkle over the peaches. Bake at 375°F for 10 minutes.
Place
the flour, sugar, baking powder, salt, butter, and nutmeg into a food
processor and add in the egg. Pulse until the mixture resembles
coarse crumbs then process until it turns to a thick paste.
Remove the oven from the heat and place the cookie dough over the peaches in pieces about 2" in diameter. Bake for 35-40
minutes. Serve with a scoop of French Vanilla ice cream. Enjoy!
