Irish Coddle

1 lb Pork Sausages
1 lb Chunk Bacon (Irish or smoked)
4 lbs Potatoes
2 large Onions
6 large Carrots
2 cups Beef Stock
1 cup Chopped Parsley
1 bottle Guinness Draught (11.2 oz)
Sea Salt
Coarse ground Black Pepper
Prep all of your ingredients pre-grilling your bacon and sausages to get some color on them. Cut the potatoes, onions, and carrots into large pieces.


Place the beef stock in a dutch oven and layer the ingredients in the pot until full. Salt and pepper each layer being careful not to use too much.  Then pour the Guinness over the ingredients.
Cook with the lid on for 3 hours at 300° F.  Dish up with some Irish Soda bread and a pint of Guinness.  Enjoy!
