Irish Soda Bread
8½
oz plain wholemeal flour, plus a little extra to sprinkle
1
tspn bicarbonate of soda
½
tsp salt
10
fl oz buttermilk
Mix all dry ingredients either in a mixer with a dough hook or using the "well method" on your board. Add in the buttermilk and mix into a smooth dough. If needed add a tablespoon more of buttermilk at a time being careful not to get the dough too wet.
Place some board flour on your board and knead briefly.
Once kneaded form into a same round approximately 8" in diameter and domed in the center.
Cut a cross into the dough halfway through and dust the top with some of the board flour.
Bake in a preheated wood grill or oven at 400° F for 30 minutes on a piece of parchment. Cool on a wire rack. Enjoy!
